DaWood Smokery Nova Lox is cold-smoked Atlantic salmon — cured, then slowly smoked at low temperature for 12 hours to preserve that silky, buttery texture you won't find at any grocery store. We fillet whole Atlantic salmon by hand, cure each piece ourselves, and cold smoke it in small batches using a dedicated cold smoke generator.

The result is rich, deeply flavoured, and unlike anything else you'll find from a Calgary smokehouse.
